Avec l&rsquo;entrepreneur <strong>Thomas Moreau<\/strong>, ils ont con\u00e7u un restaurant qui met en avant le <strong>\u00ab\u00a0hand roll\u00a0\u00bb<\/strong>. Un poisson cru envelopp\u00e9 dans une algue nori croustillante et fum\u00e9e garnie de riz vinaigr\u00e9 qui se mange comme un sushi. Il peut se d\u00e9guster \u00e0 des parfums diff\u00e9rents : saumon, yellowtail (poisson marin), crabe, Saint-Jacques, homard\u2026 et avec des sashimis ou des salades de concombre en accompagnement. Des plats pr\u00e9par\u00e9s \u00e0 la minute par le <strong>chef<\/strong> <strong>Andres Ramirez<\/strong>.
