Mobilier en bois sculpt\u00e9, inspirations n\u00e9o-classiques, plafonds italiens parsem\u00e9s de rosaces et de guirlandes en stuc de style Louis XVI&#8230; Son premier propri\u00e9taire, un limonadier (cafetier) du nom d&rsquo;Aubertot, insuffle au Caf\u00e9 de Chartres un certain prestige qui attire l&rsquo;aristocratie environnante. En 1820, <strong>Jean V\u00e9four<\/strong> acquiert l&rsquo;\u00e9difice pour la somme de 900 000 anciens francs. Son entreprise r\u00e9ussie, Jean V\u00e9four revend le restaurant \u00e0 Louis Boissier en 1823 qui c\u00e8de lui aussi l&rsquo;\u00e9tablissement aux fr\u00e8res Hamel en 1827. La r\u00e9putation grandissante du Grand V\u00e9four lui vaut d&rsquo;\u00eatre fr\u00e9quent\u00e9 par des personnalit\u00e9s de renom : <strong>Napol\u00e9on Bonaparte<\/strong>, <strong>George Sand<\/strong>, <strong>Victor Hugo<\/strong>&#8230; La Chambre des Huissiers s&rsquo;installe dans l&rsquo;\u00e9difice, tandis que sa fa\u00e7ade est class\u00e9e en 1920. Apr\u00e8s la Seconde Guerre mondiale, l&rsquo;\u00e9minent restaurateur <strong>Louis Vaudable<\/strong>, propri\u00e9taire de l&rsquo;\u00e9tablissement <strong>Maxim&rsquo;s<\/strong>, un des restaurants les plus prestigieux de la capitale, remet le Grand V\u00e9four au go\u00fbt du jour. Ce dernier tient un temps avant de retomber dans l&rsquo;oubli. La famille Taittinger devient le nouveau propri\u00e9taire du Grand V\u00e9four avant d&rsquo;\u00eatre repris par le chef <strong>Guy Martin<\/strong> en 2011.
